  • 4 skinless salmon fillets (6 oz each)
  • 2 tbsp extra virgin olive oil
  • 1/2 cup BBQ sauce
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 2 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa

Instructions

  2. Preheat grill to medium heat (375°F). Grill salmon for 5–6 minutes per side until flaky.
  3. In a separate bowl, combine diced mango, avocado, lime juice, cilantro, salt, and pepper to make the salsa.
  4. Serve grilled salmon over rice or quinoa and top with salsa.
