  • 3/4 cup whole milk (or buttermilk)
  • 1 pound breakfast sausage
  • 2 cups milk (for gravy)
  • 1/4 cup all-purpose flour (for gravy)
  • Freshly cracked black pepper (to taste)
  • Garlic powder (to taste)
  • Red pepper flakes (optional)

Instructions

  1. Preheat the oven to 450°F (232°C). In a bowl, whisk together flour, baking powder, and salt. Cut in cold butter until it resembles coarse crumbs.
  2. Gradually add milk while mixing gently until just combined. Turn out onto a floured surface and pat into a rectangle about 1-inch thick.
  3. Cut biscuits using a biscuit cutter or glass and place on a parchment-lined baking sheet.
  4. Bake for 12-15 minutes until golden brown.
  5. In a separate pan, cook sausage over medium heat until browned. Sprinkle with flour and stir well before slowly adding milk while whisking to thicken.
  6. Season gravy with pepper and garlic powder; serve hot over biscuits.
