  • 34 lbs pork shoulder
  • 1 cup brown sugar
  • 1 cup salsa verde
  • 2 tsp garlic powder
  • 2 tsp ground cumin
  • 2 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tbsp olive oil

Instructions

  1. Trim excess fat from the pork shoulder and cut into large chunks.
  2. In a bowl, mix brown sugar, garlic powder, cumin, onion powder, black pepper, and salt. Rub this mixture over the pork pieces.
  3. Heat olive oil in a skillet over medium-high heat. Sear each piece of pork until browned on all sides (about 3-4 minutes per side).
  4. Place the seared pork in a slow cooker and pour salsa verde over it. Cover and cook on low for 8 hours or high for 4 hours until fork-tender.
  5. Shred the pork using two forks and return it to the slow cooker with juices to keep it moist.
