Ingredients

  • 150g thick-cut lardons (bacon)
  • 250g all-purpose flour
  • 1 tablespoon baking powder
  • 3 large eggs
  • 200ml whole milk
  • Fresh herbs (thyme or rosemary)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. In a skillet, sauté the lardons over medium heat until crispy, about 5-7 minutes. Allow to cool.
  3. In a bowl, whisk together the flour, baking powder, salt, and pepper.
  4. In another bowl, beat the eggs and milk until frothy. Combine with dry ingredients without overmixing.
  5. Gently fold in cubed Camembert cheese, cooked lardons, and chopped herbs.
  6. Pour the batter into the prepared pan and bake for 40-45 minutes or until golden brown and a toothpick comes out clean.
