  • 1 lb boneless, skinless chicken thighs
  • 2 medium onions, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp curry powder
  • 1 can (14 oz) coconut milk
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
  2. Add garlic and ginger; cook until fragrant (1-2 minutes).
  3. Stir in curry powder and additional spices (optional) for another minute.
  4. Add chicken thighs; brown on all sides (6-8 minutes).
  5. Pour in coconut milk and tomato paste; bring to a gentle simmer.
  6. Reduce heat and cook uncovered for 25-30 minutes until thickened.
  7. Serve hot over rice or with flatbreads.
