  • 23 lbs chuck roast
  • 1 medium onion, chopped
  • 1 cup bell peppers, diced (mixed colors)
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 4 cups low-sodium beef broth
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Chop onion and bell peppers; mince garlic.
  2. Heat oil in a large pot over medium-high heat and brown the chuck roast on all sides.
  3. Remove meat; add onions and garlic to the pot. Cook until onions are translucent (3-4 minutes).
  4. Stir in bell peppers and cumin; cook for another minute.
  5. Return chuck roast to the pot, pour in beef broth until meat is mostly covered. Cover and simmer for about 2 hours until tender.
  6. Stir in cilantro and squeeze lime juice before serving.
