Ingredients

  • 4 medium ripe tomatoes
  • 1 cup shredded cheese (mozzarella and cheddar blend)
  • 1 cup cooked quinoa or rice
  • 1/4 cup fresh basil or parsley, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup panko breadcrumbs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the tomatoes and scoop out the insides, reserving the pulp.
  3. In a bowl, combine quinoa or rice, cheese, herbs, garlic, olive oil, salt, pepper, and reserved tomato pulp.
  4. Spoon the stuffing into each tomato until overflowing.
  5. Top with panko breadcrumbs and drizzle with olive oil.
  6. Bake for 25-30 minutes until golden brown and tender.
