  • 1 cup long-grain rice
  • 2 cups beef broth
  • 2 cups shredded cheese (cheddar and mozzarella blend)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 tbsp olive oil
  • Salt, pepper, and paprika to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish with nonstick spray.
  2. In a skillet over medium heat, warm olive oil. Add onions and bell peppers; sauté until soft (about 5 minutes).
  3. Add ground beef to the skillet; cook until browned, draining excess fat as needed.
  4. Stir in garlic, salt, pepper, paprika, diced tomatoes (with juice), and rice; mix well to coat everything evenly.
  5. Pour in beef broth and bring mixture to a simmer before transferring it into the greased baking dish.
  6. Top with shredded cheese and cover with foil; bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly and golden brown.
