  • 8 corn or flour tortillas
  • 2 cups shredded sharp cheddar cheese
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 medium onion, finely chopped
  • 1 cup enchilada sauce
  • ¼ cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, sauté the ground beef and onion until the beef is browned and onions are translucent.
  3. Add diced tomatoes, salt, pepper, and any desired spices; simmer for 5 minutes.
  4. On each tortilla, place some beef mixture and sprinkle cheese before rolling them up tightly.
  5. Arrange rolled enchiladas seam-side down in a greased baking dish.
  6. Pour enchilada sauce over the top and sprinkle remaining cheese.
