  • ¼ cup granulated sugar
  • 2 cups fresh cherries, pitted and chopped
  • 1 tbsp lemon juice
  • 1 egg for wash (mixed with 1 tsp water)

Instructions

  1. Prepare the dough: In a bowl, whisk together flour and sugar. Cut in cold butter until crumbly. Gradually add ice water until dough holds together. Wrap in plastic wrap and refrigerate for 30 minutes.
  2. Make the filling: Combine cherries, sugar, and lemon juice in a bowl; let sit.
  3. Roll out the dough: On a floured surface, roll dough to 1/8 inch thick. Cut into circles.
  4. Assemble pies: Preheat oven to 400°F (200°C). Place half of the circles on a baking sheet, fill with cherry mixture, top with remaining circles, sealing edges.
  5. Bake: Brush with egg wash and bake for 20-25 minutes until golden brown.
  6. Cool slightly before serving warm.
