  • 4 boneless, skinless chicken breasts (about 2 lbs)
  • 12 oz fettuccine pasta
  • 1 cup dry Marsala wine
  • 8 oz fresh cremini mushrooms, sliced
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping vegetables and measuring out liquids.
  2. Cook fettuccine in a large pot of salted boiling water until al dente (8-10 minutes). Drain and keep warm.
  3. In a skillet over medium heat, add olive oil. Sauté chicken breasts until golden brown on both sides (6-7 minutes). Season with salt and pepper.
  4. Add sliced mushrooms and minced garlic; cook until mushrooms are tender (about 5 minutes).
  5. Pour in Marsala wine to deglaze the skillet, simmering until reduced by half (3-4 minutes).
  6. Stir in heavy cream, letting it simmer gently until thickened slightly (2-3 minutes).
  7. Toss in cooked fettuccine and parsley until well coated in sauce. Serve immediately.
