  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 2 cups marinara sauce (homemade or store-bought)
  • 1 cup shredded whole milk mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Place chicken breasts between plastic wrap and pound gently until about ½ inch thick.
  2. Set up three bowls: one with beaten eggs, another with breadcrumbs mixed with Italian seasoning, and a third empty. Dip each chicken breast into the eggs, then coat in breadcrumbs.
  3. Heat olive oil in a large skillet over medium heat. Sear the breaded chicken for 4-5 minutes on each side until golden brown.
  4. Transfer the chicken to a baking dish. Spoon marinara sauce over each piece and top with mozzarella and Parmesan cheese.
  5. Bake for 15-20 minutes until the cheese is bubbly and golden brown. Let it rest for five minutes before serving.
