  • 1 cup fresh breadcrumbs
  • ¼ cup fresh parsley, chopped
  • 1 large egg
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup low-sodium chicken broth
  • 2 tbsp capers, drained
  • 3 cloves garlic, minced
  • Zest of 1 lemon

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, parsley, egg, salt, and pepper. Mix until just blended.
  2. Roll tablespoon-sized portions into meatballs and place on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Add meatballs in batches and cook until browned on all sides (about 8 minutes). Remove from skillet.
  4. In the same skillet, sauté garlic and capers for about 30 seconds until fragrant.
  5. Stir in chicken broth and lemon juice; bring to a simmer while scraping up any brown bits.
  6. Return meatballs to the skillet and simmer for another 10 minutes.
  7. Cook orzo according to package instructions; drain and serve topped with meatballs and sauce.
