  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz cream cheese (full-fat)
  • 1 cup shredded Parmesan cheese (freshly grated)
  • 2 sheets puff pastry (thawed)
  • 2 tbsp fresh parsley (chopped)
  • 1 tsp garlic powder
  • Salt and pepper (to taste)
  • 1 egg (beaten for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Cook seasoned chicken breasts in a skillet over medium heat for about 6-7 minutes per side until golden brown and cooked through. Shred the cooked chicken.
  3. In a bowl, mix shredded chicken, cream cheese, Parmesan cheese, garlic powder, fresh herbs, salt, and pepper until well combined.
  4. Roll out thawed puff pastry sheets on a floured surface and cut into 4×4 inch squares.
  5. Spoon filling onto each square, fold edges over, and seal with a fork.
  6. Place pillows in the baking dish, brush with egg wash, and bake for 20-25 minutes or until golden brown.
