- 3–4 boneless, skinless chicken breasts (diced)
- 1 sheet flaky puff pastry (thawed)
- 2 cups fresh spinach
- 8 oz cream cheese (softened)
- 1 cup shredded Parmesan cheese
- 1 tsp garlic powder
- Salt and pepper (to taste)
- 2 tbsp unsalted butter (melted)
- 1 cup heavy cream
- 1 tsp dried Italian herbs
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet over medium heat, cook diced chicken until golden brown, about 5-7 minutes. Add fresh spinach and stir until wilted.
- Incorporate softened cream cheese, garlic powder, salt, pepper, and half of the Parmesan cheese into the chicken mixture until combined.
- Roll out the puff pastry on a floured surface and cut into rectangles (4 x 6 inches).
- Spoon the chicken mixture onto one side of each rectangle, fold over, and seal edges with a fork.
- Arrange on a baking sheet lined with parchment paper, brush tops with melted butter, and bake for 15-20 minutes until golden brown.
- For the sauce, melt butter in a saucepan over medium heat; stir in heavy cream and remaining Parmesan cheese until thickened, about 5 minutes.
- Drizzle sauce over baked pillows before serving.
