  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium carrots, chopped
  • 1 cup frozen peas
  • 2 stalks celery, diced
  • 1 medium onion, finely chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 package (14 oz) puff pastry sheets
  • 2 tbsp butter
  • 3 tbsp flour
  • 1 tsp fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper, then cook in a skillet until no longer pink inside (about 6-8 minutes). Remove from heat and chop into bite-sized pieces.
  3. In the same skillet, melt butter over medium heat. Add onion, carrots, and celery; sauté until tender (5-7 minutes).
  4. Stir in flour and gradually whisk in chicken broth and heavy cream. Cook until thickened (about 5 minutes).
  5. Fold cooked chicken and frozen peas into the sauce mixture. Pour into the prepared baking dish.
  6. Roll out puff pastry over the filling, cut slits for steam release, and brush with an egg wash if desired.
