  • 3 boneless, skinless chicken breasts (diced)
  • 1 cup mixed fresh vegetables (peas, carrots, green onions)
  • 2 cloves garlic (minced)
  • 4 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 large eggs (beaten)
  • Salt and pepper to taste
  • 1 tbsp vegetable oil (for cooking)

Instructions

  1. Prepare your ingredients: Chop the vegetables into bite-sized pieces and set aside.
  2. Heat the vegetable oil in a large skillet over medium heat. Add diced chicken and cook until golden brown, about 5-7 minutes. Ensure there’s no pink remaining.
  3. Add minced garlic and chopped vegetables to the skillet. Sauté for about 3-4 minutes until they are tender.
  4. Push everything to one side of the pan and scramble the beaten eggs in the empty space until just set. Combine with chicken and vegetables.
  5. Pour in soy sauce while stirring well to coat all ingredients evenly.
  6. Finish with a drizzle of sesame oil, along with salt and pepper to taste; stir thoroughly before serving.
