  • 1 cup canned pumpkin puree
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, mix the pumpkin puree, vegetable oil, eggs, and granulated sugar until smooth.
  3. In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed; do not overmix.
  5. In a small bowl, mix together additional cinnamon and sugar for the swirl.
  6. Pour half of the batter into the prepared pan and sprinkle half of the cinnamon-sugar mixture on top. Repeat with remaining batter and topping.
  7. Bake for 60-70 minutes or until a toothpick inserted comes out clean.
