  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14.5 oz) diced tomatoes with juices
  • 4 cups vegetable broth
  • 1 cup ditalini pasta (or small pasta of choice)
  • ¼ cup fresh basil, chopped
  • Grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and sauté until translucent.
  2. Stir in the carrots, celery, garlic, zucchini, and green beans; cook until softened.
  3. Add the diced tomatoes and vegetable broth; bring to a simmer.
  4. Once simmering for about 10 minutes, add the pasta and cook until al dente as per package instructions.
  5. Stir in fresh basil before serving and top with grated Parmesan cheese if desired.
