Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, sauté diced onion until translucent. Add ground beef and cook until browned; drain excess fat.
- Mix cooked rice, diced tomatoes, and the beef-onion mixture in a large bowl.
- Cut tops off bell peppers and remove seeds. Stuff each pepper with the filling until mounded.
- Place stuffed peppers upright in a baking dish, cover with foil, and bake for 30 minutes.
- Remove foil, sprinkle cheese on top, and bake uncovered until bubbly and golden brown.
