Ingredients

  • 4 large bell peppers (any color)
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 medium onion, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp Italian herbs (oregano and basil)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté diced onion until translucent. Add ground beef and cook until browned; drain excess fat.
  3. Mix cooked rice, diced tomatoes, and the beef-onion mixture in a large bowl.
  4. Cut tops off bell peppers and remove seeds. Stuff each pepper with the filling until mounded.
  5. Place stuffed peppers upright in a baking dish, cover with foil, and bake for 30 minutes.
  6. Remove foil, sprinkle cheese on top, and bake uncovered until bubbly and golden brown.
