  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp yellow curry powder
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tbsp fresh ginger, minced
  • 1 cup vegetable broth
  • 2 tbsp low-sodium soy sauce
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • Sriracha sauce for added heat (optional)

Instructions

  1. Prepare ingredients by chopping onions, garlic, and ginger.
  2. In a large pot over medium-high heat, brown the seasoned beef chuck roast on all sides (3–4 minutes per side). Remove and set aside.
  3. Sauté onions, garlic, and ginger in the same pot until translucent (about 5 minutes).
  4. Stir in yellow curry powder and cook for another minute to release the spices' fragrance.
  5. Pour in coconut milk and vegetable broth, scraping up any brown bits from the pot. Add soy sauce.
  6. Return the browned beef to the pot and cover tightly. Simmer on low for about 2–3 hours until fork-tender.
  7. Shred the beef using two forks directly in the pot and mix in lime juice and optional sriracha before serving.
