Ingredients

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp ground cinnamon
  • ½ cup unsalted butter, melted
  • ½ cup light brown sugar
  • ½ cup crushed nuts (optional)

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. In a bowl, mix flour, brown sugar, cinnamon, and melted butter until crumbly; press into the bottom of the pan.
  3. In another bowl, beat cream cheese until smooth; gradually mix in sugar and add eggs one at a time.
  4. Stir in vanilla extract until smooth. Pour half over the crust, sprinkle half of the crumb topping, then add the rest of the filling and top with remaining crumbs.
  5. Bake for 50-60 minutes until set but slightly jiggly in the center. Cool before refrigerating for at least four hours.
