  • 1/2 cup strong brewed coffee (cooled)
  • 1/4 cup unsalted butter (softened)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and prepare muffin tins with liners.
  2. In a bowl, whisk together flour, sugar, baking powder, salt, and cocoa powder.
  3. In another bowl, mix eggs, milk, melted butter, brewed coffee, and vanilla until smooth.
  4. Gradually fold dry ingredients into wet mixture until just combined.
  5. Fill cupcake liners about 2/3 full and bake for 18-20 minutes until a toothpick comes out clean.
  6. Cool completely before adding cream cheese frosting if desired.
