  • Zest and juice of 1 orange
  • 2 tsp baking powder

  • 2 large eggs (room temperature)

  • 1/2 cup milk (whole)
  • Powdered sugar for glaze (optional)

Instructions

  3. In another bowl, mix eggs, vegetable oil, milk, orange juice, and zest until combined.
  4. Gradually fold the wet mixture into the dry ingredients until just combined (avoid overmixing).
  5. Gently fold in cranberries.
  6. Pour batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick comes out clean.
  7. Let cool slightly before removing from the pan. Optionally glaze with powdered sugar mixed with orange juice.
