  • 4 cups fresh spinach
  • 3 cloves garlic (minced)
  • 8 oz cream cheese (softened)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup low-sodium chicken broth
  • 2 tsp Italian seasoning
  • 1 cup panko bread crumbs
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a large skillet, heat olive oil over medium heat. Cook seasoned chicken breasts until golden brown on both sides (6-7 minutes each).
  3. Add minced garlic during the last minute of cooking; then fold in fresh spinach until wilted (about 2 minutes).
  4. In a bowl, mix softened cream cheese with chicken broth until smooth. Stir in Italian seasoning and shredded cheeses.
  5. Pour the creamy mixture over the sautéed chicken and spinach in the baking dish. Top with panko bread crumbs.
