  • 1.5 lbs beef tips (chuck or sirloin)
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 medium sweet onion, finely chopped
  • 4 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 tbsp low-sodium soy sauce
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • Fresh parsley for garnish

Instructions

  1. Chop beef tips into bite-sized pieces and slice mushrooms and onion; mince garlic.
  2. (Optional) Sear beef tips in a hot skillet until browned.
  3. Add beef tips, mushrooms, onion, garlic, thyme, soy sauce, and beef broth to the crockpot.
  4. Stir in cream of mushroom soup until ingredients are well coated.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
  6. Garnish with freshly chopped parsley before serving.
