  • 12 large pasta shells
  • 1 cup fresh mushrooms (cremini or button), chopped
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 1 cup fresh spinach, chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 350°F (175°C). Boil salted water in a large pot and cook pasta shells until al dente. Drain and rinse under cold water.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic and mushrooms for about 5–7 minutes until softened.
  3. In a bowl, mix the cooked mushroom-garlic mixture with cream cheese, sour cream, Parmesan, spinach, oregano, salt, and pepper until well combined.
  4. Stuff each shell with the filling and place them upright in a greased baking dish.
  5. Pour marinara sauce over the stuffed shells and sprinkle with additional cheese if desired. Cover with foil and bake for 25 minutes.
