- 8 oz fresh shiitake mushrooms, sliced

- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth

- 2 tbsp unsalted butter
- 1 tsp fresh thyme (or ½ tsp dried)
- Salt and pepper to taste
- 1 tbsp lemon juice

- Clean and slice mushrooms evenly. Chop the onion and mince the garlic finely.
- In a large pot over medium heat, melt butter until foamy. Add onions and garlic; sauté until translucent.
