  • 8 oz fresh cremini mushrooms, sliced
  • 8 oz fresh shiitake mushrooms, sliced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 2 tbsp unsalted butter
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and pepper to taste
  • 1 tbsp lemon juice

Instructions

  1. Clean and slice mushrooms evenly. Chop the onion and mince the garlic finely.
  2. In a large pot over medium heat, melt butter until foamy. Add onions and garlic; sauté until translucent.
  3. Stir in the sliced mushrooms and cook for about 5-7 minutes until softened.
  4. Gradually add vegetable broth while scraping the bottom of the pot. Bring to a simmer for 10 minutes.
  5. Lower heat and stir in cream, thyme, salt, pepper, and lemon juice. Simmer gently until warmed through.
  6. For extra creaminess, blend half the soup using an immersion blender or regular blender; return blended portion to pot and mix well.
  7. Garnish with fresh thyme before serving hot.
