  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain white rice
  • 2 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter

Instructions

  1. Gather and prepare all ingredients by chopping the onion and mincing the garlic.
  2. Heat olive oil or butter in a large skillet over medium heat. Sear seasoned chicken breasts for about 5-7 minutes per side until golden brown.
  3. Remove the chicken, add onions and garlic to the skillet, and sauté until soft (3-4 minutes).
  4. Pour in chicken broth, scraping any browned bits from the pan. Stir in heavy cream and seasonings; simmer for 5 minutes.
  5. Return chicken to the skillet, spooning sauce over it. Cover and simmer for 10-15 minutes until cooked through.
  6. Cook rice according to package instructions while chicken simmers. Fluff when ready.
  7. Serve the rice topped with creamy smothered chicken and additional sauce.
