  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup grated parmesan cheese
  • 8 oz full-fat cream cheese, softened
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Pat chicken breasts dry with paper towels.
  2. In a bowl, mix cream cheese, parmesan cheese, garlic, spinach, Italian seasoning, salt, and pepper until well combined.
  3. Create pockets in each chicken breast by slicing into one side. Generously stuff with the creamy filling.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear each stuffed chicken breast for 3-5 minutes on each side until browned.
  5. Transfer the skillet to the oven and bake for 25-30 minutes until the internal temperature reaches 165°F (74°C).
