  • 34 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 cloves fresh garlic, minced
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 4 cups romaine lettuce, chopped
  • ½ cup Caesar dressing (store-bought or homemade)
  • 4 slices ciabatta or sourdough bread

Instructions

  1. Preheat the oven to 400°F (200°C). Pat dry the chicken breasts and season with salt and pepper. Coat each breast in flour.
  2. In one bowl, whisk together eggs and minced garlic. In another bowl, mix panko breadcrumbs with Parmesan cheese.
  3. Dip each chicken breast into the egg mixture, then coat thoroughly with panko breadcrumbs.
  4. Heat vegetable oil in a large skillet over medium-high heat. Fry each chicken breast for 3-4 minutes per side until golden brown and cooked through.
  5. Toast the bread slices until golden brown. Spread Caesar dressing on one side of each slice. Layer crispy chicken on top, followed by romaine lettuce and additional dressing if desired.
  6. Top with more freshly shaved Parmesan cheese before closing up the sandwich with another slice of bread. Serve immediately.
