  • 1 cup panko breadcrumbs
  • 4 green onions, chopped
  • 3 garlic cloves, minced
  • ½ cup teriyaki sauce
  • 8 oz udon noodles (or noodles of your choice)
  • 1 cup mixed vegetables (bell peppers, broccoli, snap peas)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, panko breadcrumbs, minced garlic, chopped green onions, salt, and pepper. Mix until just combined.
  3. Shape into 1-inch meatballs and place on the prepared baking sheet.
