  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup green olives, sliced
  • 1/4 cup raisins
  • 1 tsp cumin
  • 1 bay leaf
  • 2 tbsp pimento or red wine vinegar
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onions and bell peppers; sauté until softened (about 5 minutes).
  2. Push vegetables aside and add ground beef, cooking until browned (about 7 minutes).
  3. Stir in minced garlic, cumin, and bay leaf; cook for another minute until fragrant.
  4. Add canned tomatoes (with juices), olives, and raisins; stir well to combine.
  5. Reduce heat to medium-low, cover the skillet, and let it simmer for about 20 minutes.
  6. Remove from heat; discard bay leaf. Adjust seasoning as needed before serving over rice or in tortillas.
