Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 1 cup cherry tomatoes, halved
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 salmon fillets (approximately 6 oz each)
  • 4 oz feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic for about 30 seconds. Add halved cherry tomatoes and cook until softened.
  3. Push the veggies aside and place salmon fillets in the center of the skillet. Cook for 4-5 minutes on each side until flaky.
  4. Crumble feta cheese over the salmon and vegetables, stirring gently to create a creamy sauce.
  5. Toss the cooked pasta into the skillet with all ingredients, seasoning with salt and pepper to taste.
  6. Remove from heat and stir in fresh basil before serving.
