  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 2 tsp instant coffee granules
  • 1 tsp vanilla extract
  • 4 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 tbsp coffee liqueur (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan or line it with parchment paper.
  2. In a mixing bowl, combine melted butter and granulated sugar until glossy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and instant coffee granules.
  3. Gently fold in flour, cocoa powder, and brown sugar until no dry spots remain.
  4. Pour the batter into the prepared pan and bake for 20-25 minutes until a toothpick comes out with moist crumbs.
  5. For the frosting, beat cream cheese until smooth, then gradually add powdered sugar and mix until creamy. If desired, fold in coffee liqueur.
  6. Once brownies are cool, spread the frosting evenly on top.
