  • 3 lbs pork shoulder, well-marbled
  • 2 large sweet yellow onions, sliced
  • 6 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh thyme (or 1 tsp dried)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onions and garlic while allowing the pork shoulder to rest at room temperature.
  2. In a heavy-bottomed pot, heat olive oil over medium-high heat. Sear the seasoned pork shoulder until browned on all sides (about 3-4 minutes per side). Remove and set aside.
  3. In the same pot, sauté the sliced onions until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  4. Pour in chicken broth and add thyme; scrape up any brown bits from the bottom of the pot.
  5. Return the pork to the pot, submerging it in liquid. Bring to a gentle simmer, cover tightly, and reduce heat to low. Braise for about 2-3 hours until fork-tender.
  6. Once cooked, remove the pork and let it rest before slicing. Serve topped with onion sauce over rice or mashed potatoes.
