Instructions
- Prepare your ingredients by chopping the onions and garlic while allowing the pork shoulder to rest at room temperature.
- In a heavy-bottomed pot, heat olive oil over medium-high heat. Sear the seasoned pork shoulder until browned on all sides (about 3-4 minutes per side). Remove and set aside.
- In the same pot, sauté the sliced onions until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
- Pour in chicken broth and add thyme; scrape up any brown bits from the bottom of the pot.
- Return the pork to the pot, submerging it in liquid. Bring to a gentle simmer, cover tightly, and reduce heat to low. Braise for about 2-3 hours until fork-tender.
- Once cooked, remove the pork and let it rest before slicing. Serve topped with onion sauce over rice or mashed potatoes.
