  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup Italian-seasoned breadcrumbs
  • 2 large eggs
  • ¼ cup fresh parsley, chopped
  • 1 small onion, finely diced
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
  2. In a skillet over medium heat, sauté diced onions in olive oil until translucent; add minced garlic and cook for an additional minute.
  3. In a large bowl, combine ground chicken, sautéed onion and garlic, breadcrumbs, eggs, parsley, salt, pepper, and half of the Parmesan cheese. Mix gently to avoid overmixing.
  4. Shape the mixture into a loaf on the baking sheet or in the loaf pan. Top with remaining Parmesan cheese and optionally drizzle with olive oil.
  5. Bake for 45-50 minutes or until an internal temperature of 165°F (74°C) is reached. Let rest for 10 minutes before slicing.
