  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh basil leaves (for garnish)
  • 1/2 cup gluten-free flour
  • 2 large eggs (beaten)
  • 2 tsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Set up a breading station with three bowls: one for flour seasoned with salt and pepper, another for beaten eggs mixed with olive oil, and the last for gluten-free breadcrumbs combined with garlic powder and Parmesan.
  3. Dredge each chicken breast in flour, dip in egg mixture, then coat evenly with breadcrumbs.
