  • 1 pizza dough (store-bought or homemade)
  • 1 ripe avocado
  • 2 cups fresh spinach
  • 1 medium zucchini, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 2 tbsp fresh basil, chopped (plus extra for garnish)
  • 1 tsp dried oregano
  • ¼ tsp garlic powder
  • Juice of ½ lemon
  • Salt and pepper, to taste

Instructions

  1. 1. Preheat oven to 475°F (245°C).
  2. 2. Roll out the pizza dough on a floured surface and transfer it to a lined baking sheet.
  3. 3. In a bowl, mash avocado with lemon juice, garlic powder, salt, and pepper until smooth.
  4. 4. Spread the avocado mixture evenly over the dough.
  5. 5. Layer fresh spinach on top, followed by zucchini slices and halved cherry tomatoes.
  6. 6. Sprinkle crumbled feta cheese over the veggies.
  7. 7. Drizzle olive oil over the top.
  8. 8. Bake for 12-15 minutes until edges are golden brown and cheese is bubbly.
