  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 ripe avocados
  • 1/2 cup red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime (about 2 tbsp)
  • 1/2 cup Greek yogurt
  • Salt and pepper to taste

Instructions

  1. Cook the chicken by boiling in salted water for 15-20 minutes until fully cooked (165°F internal temperature). Let cool.
  2. Dice or shred the cooked chicken into bite-sized pieces.
  3. In a large bowl, mash the avocados until smooth but chunky; add lime juice immediately.
  4. Fold in the diced red onion, chopped cilantro, and Greek yogurt until well combined.
  5. Add the chicken to the avocado mixture; season with salt and pepper to taste.
  6. Chill in the fridge for at least 20 minutes before serving.
