- 2 ripe avocados
- 1/2 cup red onion, finely diced

- Juice of 1 lime (about 2 tbsp)
- 1/2 cup Greek yogurt
- Salt and pepper to taste
Instructions
- Cook the chicken by boiling in salted water for 15-20 minutes until fully cooked (165°F internal temperature). Let cool.
- Dice or shred the cooked chicken into bite-sized pieces.
- In a large bowl, mash the avocados until smooth but chunky; add lime juice immediately.
- Fold in the diced red onion, chopped cilantro, and Greek yogurt until well combined.
- Add the chicken to the avocado mixture; season with salt and pepper to taste.
- Chill in the fridge for at least 20 minutes before serving.
