  • 4 medium Yukon Gold potatoes, cubed

  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 2 tsp fresh thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes in batches until browned on all sides (about 4-5 minutes per batch). Remove and set aside.
  2. Sauté onions in the same pot until translucent (3-4 minutes), then stir in minced garlic for another minute.
  3. Add chopped carrots and potatoes; cook for about 2 minutes to combine flavors.
  4. Return seared beef to the pot with bay leaves and thyme. Pour in enough broth to cover all ingredients (approximately 4 cups).
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for at least 1.5 hours or until meat is fork-tender.
  6. Taste before serving; season with salt and pepper as needed.
