  • 1/2 cup Unsalted Butter (softened)
  • 4 Garlic Cloves (minced)
  • 2 tbsp Fresh Rosemary (chopped)
  • 2 tbsp Fresh Thyme (leaves only)
  • 2 tsp Kosher Salt
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Allow the prime rib to sit at room temperature for 30 minutes; pat dry with paper towels.
  3. In a bowl, mix softened butter, minced garlic, rosemary, thyme, salt, and pepper until combined.
  4. Generously rub the herb butter mixture over the prime rib.
  5. Drizzle olive oil over the roast before placing it in the oven.
  6. Roast at 450°F for 20 minutes; then reduce temperature to 325°F (163°C) and cook until medium-rare (about 1 hour).
  7. Let the roast rest for at least 20 minutes before slicing.
