- 1 large egg
- 1/2 tsp salt
- 3/4 cup warm water
- 2 cups mashed potatoes (about 2 large Russet potatoes)
- 1 medium onion, sautéed until golden
- 1/2 cup shredded sharp cheddar cheese
- Salt and pepper to taste
Instructions
- In a bowl, mix flour and salt. Create a well in the center, add egg and warm water gradually while mixing until it forms a soft dough.
- Knead on a floured surface for about 5-7 minutes until elastic.
- Boil potatoes until tender; mash with sautéed onions and cheddar cheese. Season with salt and pepper.
- Roll out the dough to about 1/8 inch thick. Cut into circles (3 inches in diameter).
- Place filling on one half of each circle, fold over, and pinch edges tightly to seal.
- Boil salted water in a pot; cook pierogies in batches until they float (about 3-5 minutes). Drain carefully.
- Serve warm with melted butter or sour cream.
