  • 1 cup long-grain rice (basmati or jasmine)
  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)

Instructions

  1. Melt butter in a large pot over medium heat. Add chopped onions and sauté until translucent.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add the rice, stirring for about 2–3 minutes to toast it slightly.
  4. Pour in the vegetable broth, dried thyme, bay leaf, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat to low, cover the pot tightly, and simmer for about 15–20 minutes until liquid is absorbed and rice is tender.
  6. If using mixed vegetables, add them in during the last five minutes of cooking.
