- 1/2 cup pure honey
- 2–4 chipotle peppers in adobo sauce (adjust for spice level)
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 8 tortillas (flour or corn)
- Toppings: Fresh cilantro, diced onions, lime wedges, avocado
Instructions
- 1. Marinate the beef by mixing honey, chipotle peppers, garlic, cumin, and onion in a bowl. Rub the mixture over the chuck roast and marinate for at least one hour.
- 2. Sear the beef in a hot skillet with oil until browned on all sides to lock in flavor.
- 3. Transfer the seared beef to a slow cooker. Add any remaining marinade and 1/2 cup of water. Cook on low for 8 hours or high for 4 hours until fork-tender.
