  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 3 large eggs, room temperature
  • 1/2 cup whole milk or almond milk
  • 1 tbsp dried culinary-grade lavender buds
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large mixing bowl, cream butter and sugar until light and fluffy (3-5 minutes).
  4. Add eggs one at a time, mixing well after each addition. Drizzle in honey and mix until smooth.
  5. Fold in dried lavender buds.
  6. Alternate adding dry ingredients and milk to the butter mixture, starting and ending with dry ingredients. Mix until just combined.
  7. Divide batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Let cool before transferring to wire racks to cool completely.
