  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix graham cracker crumbs and melted butter; press into a mini muffin tin.
  2. Beat softened cream cheese until smooth. Gradually add sugar until creamy.
  3. Stir in sour cream, lemon juice, lemon zest, and vanilla until well combined.
  4. Fill muffin cups with the cheesecake mixture.
  5. Bake for 15-20 minutes until set but slightly jiggly in the center.
  6. Chill in the fridge for at least 2 hours before serving.
