  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • 1/2 cup water

Instructions

  1. Preheat the oven to 350°F (175°C). Combine flour and sugar in a bowl. Cut in cold butter until crumbly.
  2. Roll out the dough, place in a pie dish, and blind bake for about 15 minutes until lightly golden.
  3. In a saucepan, whisk together sugar, cornstarch, salt, water, lemon juice, and zest over medium heat until thickened.
  4. Remove from heat; gradually stir in beaten egg yolks while whisking to prevent scrambling. Return to low heat until further thickened.
  5. For the meringue, beat egg whites with cream of tartar until soft peaks form; gradually add sugar until glossy peaks form.
  6. Spread meringue over warm filling and bake for an additional 10-15 minutes until golden brown.
