  • ½ cup granulated sugar
  • ¼ cup poppy seeds
  • ⅓ cup unsalted butter (melted)
  • 2 large eggs
  • ¾ cup whole milk
  • Zest and juice of 1 lemon
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, salt, sugar, and poppy seeds.
  3. In another bowl, mix melted butter, eggs, milk, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Combine the wet ingredients with the dry ingredients gently using a spatula; do not overmix.
  5. Fill each muffin cup about two-thirds full and bake for 18-20 minutes until golden brown.
  6. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
