  • 8 oz linguine
  • 1 lb fresh littleneck clams
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup parsley, chopped
  • Zest of 1 lemon

Instructions

  1. Clean the clams in cold water for about 30 minutes. Rinse well.
  2. Cook linguine in a large pot of salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
  3. In a large skillet over medium heat, add olive oil and sauté the garlic until fragrant (about 30 seconds).
  4. Add the clams and pour in the white wine; sprinkle with red pepper flakes if using. Cover and simmer until clams open (5-7 minutes).
  5. Discard any unopened clams. Add cooked linguine to the skillet along with parsley and lemon zest. Toss to combine.
  6. Serve immediately, garnished with extra parsley if desired.
